Named after the historic Cellar 23 at Penfolds' Magill Estate, where Pinot Noir barriques are matured, Bin 23 continues the winery's long-standing pursuit of cool-climate Pinot Noir. Crafted from premium Tasmanian fruit, the 2024 vintage highlights the purity and finesse of one of Australia's most celebrated Pinot Noir regions. Raspberry red in the glass, it opens with aromas of fresh raspberry, dark berries and plum, layered with earthy notes, a hint of briny caperberry and subtle savoury complexity. The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process.
